2 chipotles, chopped, plus 2 tbsp adobo sauce
2-4 slices Gorgonzola cheese
2 burger buns - we use cheddar jalapeno buns
1/2 onion, thinly sliced
4-5 button mushrooms, thinly sliced
1 garlic clove, minced
olive oil to sautée onion, mushrooms and garlic
jalapeno, sliced
lettuce leaves
sliced tomato
sliced avocado
smoked paprika
salt
pepper
El Diablo burger preparation steps:
1. sauté onions, mushrooms and garlic until soft, or better yet, carmelized.
2. mix the ground beef, chopped chipotles, adobo sauce, smoked paprika, salt and pepper and form 2 patties.
3. BBQ patties on high heat for 8-10 minutes, melting the Gorgonzola cheese near the end of grilling. Grill the jalapeno at the same time. Toast burger buns near the end of patty grilling.
4. assemble the burger: bun, burger with cheese, onion/mushroom/garlic mix, jalapeno slices, lettuce, tomato, avocado.
Serve with Gaufrettes. Bliss!
